The inaccessibility of the region with the steep slopes requires harvest to be done in the traditional way, without the use of machinery. The olive groves are cultivated with the principles of organic farming. Only the fruits on the tree are collected and everything else that has fallen on the ground remains as a natural fertilization. The trees are groomed and shaken in small groups with traditional chestnut wood sticks. Then the olives are transferred to the nearest road and the fastest possible to the mill for grinding, ensuring a high quality end product. In the cooperative cold press mill in the Palaiochori village the harvest is collected and crushed. There tradition meets science in order to obtain a high quality product. Furthermore, the accuracy of chemical and sensory analysis by international accredited labs ensures the overall quality of our product in order for the final recipient to be sure to obtain a truly organic extra virgin olive oil.
